Antipasto Salad Meal Prep Recipe


6 Cups Spring Mix

4 oz Salami, chopped

4 oz Prosciutto, chopped

4 oz Kalamata Olives

1/2 Cup Roasted Red Peppers, chopped

1/2 Cup Artichoke Hearts

12 oz Marinated Mozzarella Balls

4 Pepperoncini Peppers

Italian Dressing or Oil & Vinegar (optional)


Divide Italian Greens Mix evenly between the 4 meal prep containers.

Evenly divide the salami, prosciutto, olives, roasted red peppers, artichoke hearts, mozzarella, and pepperoncinis and place on top of the greens mix in each meal prep container.

Seal & store in the refrigerator until ready to eat.
