Sub in a Tub Meal Prep

Lunch meat and cheese are rolled in to pinweheels and placed on top of a bed of greens next to sliced cherry tomatoes and sliced white onion. There is a 1 ounce container with oil and vinegar in the left bottom corner of the meal prep container.

Ingredients

4 oz greens mix

6 oz deli meats

3 slices of provolone cheese

3/4 cup cherry tomatoes, sliced in half

1/2 medium white onion, sliced thin

1.5 oz extra-virgin olive oil

1.5 oz red wine vinegar

1 tablespoon dried Italian herbs

Instructions

Divide the greens among four meal prep containers.

Roll your meats and cheeses together, then slice into to pinwheels – if desired. Alternatively, you can chop the meats and cheese. Add them to the top of your greens with the sliced cherry tomatoes and onion.

Add oil, vinegar, and Italian herbs in a small bowl and stir to combine. Divide among 3 1 oz containers containers. Seal and place one in each meal prep container.

Seal the meal prep containers and store in your fridge until ready to use.
