Sub in a Tub Meal Prep

Skip the bread, but keep all the flavor with this “sub in a tub” lunch meal prep. No cooking necessary, customize with your favorite meats and toppings. 

Lunch meat and cheese are rolled in to pinwheels and placed on top of a bed of greens next to sliced cherry tomatoes and sliced white onion. There is a 1 ounce container with oil and vinegar in the left bottom corner of the meal prep container.

Sub in a tub is one of the greatest lunch meal preps of all time!

It has everything you love about a big sub sandwich – savory deli meats, creamy cheese, fresh veggies, and a tangy oil and vinegar drizzle. There’s just one twist – it’s served up without the bread.

That makes it low-carb, budget-friendly, and perfect for packing into lunch containers for the week. There’s no cooking involved, so it’s great for those weekends when you’re running short on time to prep.

You can top it however you’d like. I went “Mike’s Way”, just like at Jersey Mike’s – tomatoes, onions, Italian herbs, olive oil, and vinegar. Have fun recreating your favorite sandwich in salad form!

Ingredients

  • Greens – I use baby butter crunch or little gem lettuce. They both hold up well over the week.
  • Deli meat – I used a combo pack of Italian meats – calabrese, prosciutto, and capocollo. You can substitute with any deli meats you prefer.
  • Cheese – I like to use sliced provolone or cheddar.
  • Toppings – Cherry tomatoes, onion, cucumbers, pickles, bell peppers, olives, etc.
  • Dressing – Oil and red wine vinegar with a pinch of dried Italian herbs is my favorite.

Tips

  1. To help keep the greens fresh all week, place a paper towel in the bottom of each meal prep container to absorb excess moisture. I’ve noticed glass containers keep salad longer than plastic.
  2. Pack items like dressing and potent smelling toppings (onions) in separate small plastic containers to keep their smell from overpowering other ingredients.
  3. Never get bored with this recipe because there are endless variations! Look up your favorite sandwich shops menu and recreate their most popular subs.

Ingredients

4 oz greens mix

6 oz deli meats

3 slices of provolone cheese

3/4 cup cherry tomatoes, sliced in half

1/2 medium white onion, sliced thin

1.5 oz extra-virgin olive oil

1.5 oz red wine vinegar

1 tablespoon dried Italian herbs

Instructions

Divide the greens among three meal prep containers.

Roll your meats and cheeses together, then slice into pinwheels – if desired. Alternatively, you can chop the meats and cheese. Add them to the top of your greens with the sliced cherry tomatoes and onion.

Add oil, vinegar, and Italian herbs in a small bowl and stir to combine. Divide among 3 1 oz containers. Seal and place one in each meal prep container.

Seal the meal prep containers and store in your fridge until ready to use.
