This creamy, dreamy pistachio chia pudding is packed with good-for-you ingredients and tastes like dessert! It’s the perfect make-ahead treat that comes together in a snap.

Sweet, nutty, and creamy, this healthy dessert is literally the perfect combo of rich pistachio flavor, silky pudding texture, and nutrient-packed chia seeds.

If that wasn’t enough to sell you on it, you’re going to love how easy it is to make. You basically throw a few ingredients in a bowl or jar, give it a good stir, then let the fridge do the rest of the work. No stove, no blender, no stress!

And it is versatile – pistachio chia pudding is a great choice whether you’re packing lunches, fully meal prepping for the week, or just want something on hand you can grab before running out the door.

Ingredients

A bottle of pistachio milk, a box of sugar-free pistachio Jello pudding mix, shelled pistachios, and a container of chia seeds.

  • Chia Seeds – I recommend buying these in bulk and making a chia pudding recipe every week.
  • Milk – Use your preferred milk – almond, oat, coconut, etc. Water can be substituted for lower calories.
  • Pistachio Pudding Mix – Sugar-free Jello instant pudding mix brings the pistachio flavor.
  • Topping – Chopped pistachios or granola.

Tips

  1. Don’t care for the texture of chia pudding? Try blending it with an immersion blender or a standing blender before refrigerating.
  2. Add melted chocolate over the top to make a Dubai chocolate bar inspired version.
  3. Make sure you stir once when you initially mix the ingredients, and again 10-15 minutes later to keep the chia seeds from clumping.
  4. Switch up your meal prep routine and try other variations like this even creamier ube chia pudding or the more indulgent PB&J chia pudding.

Ingredients

1/2 cup chia seeds

2 cups pistachio or almond milk

3 tablespoons pistachio sugar-free Jello instant pudding mix

3 tablespoons pistachios, divided (optional topping)

Instructions

Add chia seeds, milk, and pudding mix into a mixing bowl. Whiskey until well-combined and lumps from the pudding mix are no longer visible.

Cover and place in the fridge for 10 minutes. Remove and stir again. Recover and leave in the fridge at least 2 hours to set up.

Add 1 tablespoon of pistachios before eating and enjoy!
