Bagel & lox is one of my favorite breakfast dishes so I thought I’d put a meal prep twist on it. If you’re getting bored with your breakfast meal preps, I highly recommend giving it a try!
To put this together, I simply used peppered smoked salmon, soft-boiled eggs, bagel chips, and a protein greens mix.
Sometimes I like to cut and mix everything up like a salad (bagel chips make phenomenal croutons if you didn’t know), other times I include a dairy-free cream cheese and make mini bagel sandwiches dipped in the egg.
If soft-boiled eggs aren’t your thing, you can easily swap hard-boiled or leave out entirely if you don’t want the extra protein.

Ingredients
4 Cups Greens Mix
8 oz Smoked Salmon
2 Soft-Boiled Eggs, peeled and halved
20 Bagel Chips
Instructions
Prepare four meal prep containers and distribute the greens evenly among them. Place 2 oz of smoked salmon, one half of a soft-boiled egg in each container.
Divide the bagel chips equally among 4 ziploc bags and place in meal prep containers, or add them the morning of (this keeps them from getting soggy).
Seal meal prep containers and store in the refrigerator until ready to eat.
