These parmesan crusted pork chops taste way better than “shake and bake”, but they’re just as easy to make! They also reheat well – solidifying them as an excellent meal prep dinner choice.

It’s one of those meals I just can’t stop making because it hits all the right notes. It’s filling without being too heavy, packed with flavor, and for those of us who grew up with Moms who loved shake-and-bake seasoning, it brings a welcome feeling of nostalgia.
I often have it for dinner with a side salad to help get my daily servings of veggies in.
Ingredients
- Pork Chops – Purchase boneless pork chops that weigh about 5 oz each.
- Parmesan – You’ll want to use grated parmesan so that it coats the pork chop evenly.
- Seasoning – Salt, garlic powder, and paprika for the chops. Ranch for the vegetables.
- Potatoes – Get baby potatoes and half or quarter them so they cook at the same time as the carrots. You can substitute fingerling potatoes and skip chopping.
- Carrots – Pre-packaged baby carrots make for easy prep, but you can chop full-size carrots if you prefer.
- Oil – Oil will help bind the seasoning to both the pork chops and the vegetables. I use avocado oil, but any neutral oil can be substituted.

Tips
- No air fryer? No problem! Prep the ingredients and put everything on a baking sheet, then bake at 375 F for 25-30 minutes, flipping halfway through.
- Switch up the seasonings to keep it interesting. Instead of ranch on the veggies, try a cajun or Italian seasoning blend.
Air Fryer Pork Chop Meal Prep
A filling dinner meal prep with parmesan coated air fryer pork chops and ranch carrots and potatoes.

Ingredients
4 boneless pork chops (approximately 5oz each)
3 tablespoons oil, divided
1/2 cup grated parmesan
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon salt
1 lb baby potatoes
1 lb baby carrots
1.5 tablespoons ranch seasoning
Instructions
Add the grated parmesan, garlic powder, paprika, and salt into a bowl and stir to combine.
Brush or rub 1.5 tablespoons of the oil (reserve the rest for the veggies) all over your pork chops.
Dredge the pork chops in the seasoning on both sides, then place in your air fryer and cook at 380 F for 10 minutes. When finished cooking, transfer each to a meal prep containers and allow to cool.
While the pork chops are cooking, add the vegetables to a large bowl along with the remainder of the oil. Toss until evenly coated.
Add the ranch seasoning and toss again. Transfer vegetables to the air fryer and cook 15 minutes at 400 F, shaking halfway through for an even cook.
When finished cooking, evenly distribute among your meal prep container. Once cool, seal containers and place in the fridge for up to 4 days.
