These overnight oats are inspired by the flavors of a matcha latte. They’re a great way to start the day with antioxidants and a gentle caffeine boost.
A strawberry matcha latte is one of my all-time favorite morning beverages. Recreating it in the form of overnight oats seems like a great idea to me!
The earthy flavor of matcha combines perfectly with the creaminess of the oats, and the sweetness with the slight acidity of the fresh strawberries brings it all together.
I love that the oats keep me full, while the matcha gives me a subtle, steady energy boost without the jitters and crash that comes with coffee.
Ingredients
- Oats – Use old-fashioned rolled oats. Instant oats will turn to mush.
- Almond milk – You can substitute cow milk, coconut milk, soy milk…whatever your preference is.
- Greek yogurt – This adds protein and a creamy texture. I use whole milk, but non-fat works too.
- Matcha – I recommend using ceremonial grade matcha as it offers the best flavor.
- Chia seeds – Buy these in bulk to save money.
- Honey – Any sweetener of your choice can be substituted.
- Strawberries – Use fresh sliced strawberries, or substitute preserves.
Tips
- Experiment with different topping combinations such as other fresh fruits, jams, nuts, coconut chips etc.
- A splash of vanilla extract or vanilla bean paste adds a wonderful subtle flavor to these oats.
- Instead of making small, individual portions, you can multiply the recipe and make in a large bowl – portioning it out when desired.
