For me, breakfast is the most important meal to prep so I always have something ready to go in the fridge. The problem is that I get rather tired of eating yogurt, overnight oats, and chia pudding.
Learning how to make and meal prep protein waffles was a game changer for me! Now I could have what seems like an indulgent breakfast without any of the guilt!

How To Meal Prep Protein Waffles
After your waffles are cooked, transfer them to a cooling rack and allow to cool.
Once they have cooled completely, place them in your meal prep container and seal. Store in the fridge up to 1 week.
How To Freeze
After waffles have cooled completely, place them in a ziploc bag (remove as much air as possible) or tightly wrap & seal with plastic wrap. Place in the freezer for up to 3 months.

Ingredients
Protein Waffle:
1/3 Cup Protein Powder
1 Tbsp Gluten Free All Purpose Flour
3 Large Eggs
2 Tbsp Peanut Butter
3 Tbsp Coconut Oil, melted then cooled to room temperature
1/4 Tsp Salt
Toppings:
1 1/2 Cups Berries (optional)
1/2 Cup Peanut Butter (optional)
Instructions
Place all ingredients in a blender and blend until thick and smooth.
Add ingredients to your waffle maker and cook until done (I use this one and it cooks the waffles in about 4-5 minutes).
Remove waffle and place on a baking rack. Allow to cool completely.
Prepare four meal prep containers. Divide the berries and peanut butter evenly among them. Separate the waffle into 1/4s then place each quarter in a meal prep container. Seal and store in the refrigerator until ready to eat.
