These veggie boxes with homemade Greek yogurt ranch have become a staple in my fridge. They satisfy my afternoon cravings, are low-calorie, and full of nutrients.
The best part? Prepping a week’s worth can be done in minutes! Lots of grocery stores sell Greek yogurt ranch, so you can make this prep even faster by buying the pre-made kind.
You can substitute an olive oil & red wine vinegar mixture for the ranch to make it even lower-calorie. Hummus is also a good option, if you’d prefer another dipping sauce.

Ingredients
Greek Yogurt Ranch
1/2 Cup Greek Yogurt
1/2 Tsp Dried Dill
1/2 Tsp Dried Chives
3/4 Tsp Garlic Powder
1/4 Tsp Onion Powder
1 Tsp Apple Cider Vinegar
1/4 Tsp Honey
1/4 Tsp Salt
2 Tablespoons Water
Veggies
1 Cup Mini Sweet Peppers
1 English Cucumber, sliced
1 Cup Broccoli
3/4 Cup Baby Carrots
3/4 Cup Cherry Tomatoes
Instructions
Greek Yogurt Ranch
Add all ingredients to a bowl and stir well to combine, or add all ingredients to a mason jar, seal with the lid and shake to combine.
Divide Greek yogurt ranch between small seal-able containers (I use these). Seal & place one in each meal prep container.
Veggies
Wash and dry all veggies.
Place veggies in meal prep containers. Seal meal prep containers and store in the refrigerator until ready to consume.
