We have found that prepping freezer meals saves us so much money! Instead of ordering takeout or heading out for dinner when we didn’t have time to prep, we simply grab one of these and voila! A delicious dinner without spending any extra money!
These chicken fajitas our are favorite freezer meal. I can prep a bag in less than 10 minutes and they taste just as good as our neighborhood Mexican restaurant!
I use these Ziploc bag stands to hold my bag open while I make freezer meals. You can definitely do it without, but if you are prepping a bunch at once it really makes things easy.
When your ready to make it, you can simply dump the contents of the Ziploc bag into your crock pot and cook on low for 6-8 hours or high for about 4 hours.
After cooked through, use a fork to shred the chicken. I let it sit in the juices about 10-15 minutes after shredding, for optimum flavor and juiciness.
Even with buying organic ingredients, this meal cost me $15. That’s only $2.50 per serving!

Freezer Chicken Fajitas Recipe

Ingredients
1.5 lbs Chicken Breast, fat trimmed off
2 Large Bell Peppers (I do 1 Red, 1 Green)
1 Large Onion
2 Cloves Garlic, minced
Juice of 1 Lime
1 Tablespoon Chili Powder
2 Teaspoons Cumin
1 Teaspoon Paprika
1/4 Teaspoon Cayenne
Instructions
Slice bell peppers and onion. Place in the bottom of the Ziploc bag. Add the minced garlic and lime juice.
Combine all the seasonings in a small bowl. Coat chicken & rub all over with the seasoning mixture. Place on top of the peppers and onions.
Seal the bag & store in the freezer up to 90 days.
When ready to cook, dump in a crock pot and cook on low for 6-8 hours, until chicken is tender and shreds easily.
