Protein French Toast

Want to start your day with a balanced breakfast? Then you need to add this satisfying protein-packed French toast to your meal prep routine!

I try to prep a protein-focused breakfast every week, because starting off with the right amount of protein really helps keep me on track for the rest of the day.

I lean in to a lot of the classics like protein pancakes and overnight protein oats, but I’m always looking for new ideas to keep me interested. When I first learned about protein french toast, it was like love at first sight!

This recipe isn’t too different from your standard french toast. It contains extra eggs and greek yogurt topping for added protein. Vanilla whey powder adds even more protein, while also eliminating the need to use additional sugar.

Ingredients

A carton of egg whites, loaf of bread, half gallon of milk, eggs, cinnamon, maple syrup, greek yogurt, and protein powder.

  • Bread – Use any bread you’d prefer. I like Dave’s Killer bread, but also sometimes use sourdough.
  • Egg – I use a mix of eggs and egg whites.
  • Milk – You can use any milk you’d prefer (cow, almond, soy, etc), just be sure to recalculate the macros if you don’t use whole milk.
  • Protein powder – I like vanilla whey protein powder in this, but you can experiment with different flavors.
  • Cinnamon – I use Saigon cinnamon. Any variety is fine.
  • Greek yogurt – Use plain greek yogurt to avoid any additional sweeteners.
  • Maple syrup – I add maple syrup to the greek yogurt as a sweetener. You can substitute honey, stevia, or any other sweetener.
  • Berries – I like a mix of fresh raspberries and blueberries.

Tips

  1. Whisk the protein powder into your milk so that it fully dissolves before adding to the egg mixture, otherwise it will end up in clumps.
  2. The best way to reheat this is to put in a non-stick pan over medium heat for a few minutes on each side. This keeps it moist and less chewy than the microwave.

Ingredients

French Toast

4 slices of bread 

2/3 cup egg whites

2 eggs 

2/3 cup milk

2 scoops vanilla protein powder 

1 teaspoon cinnamon 

cooking spray

Topping

3/4 cup Greek yogurt

1 tablespoon maple syrup

1 cup mixed berries

Instructions

Add protein powder and milk to a mixing bowl and whisk together until all the clumps are gone.

Add egg whites, eggs, and cinnamon. Whisk until well-combined.

Heat a large skillet over medium-high heat. Spray lightly with cooking oil.

Dip 2 slices of bread in the egg mixture and place in the skillet. Cook for 2-3 minutes on each side, until browned. Remove from heat and repeat with remaining slices of bread.

Prepare four meal prep containers. Place one slice of cooked French toast in each.

In a small bowl, stir greek yogurt and maple syrup together. Divide among four 2oz containers. Place one in each meal prep container.

Distribute the berries evenly among the meal prep containers then seal each and place in the fridge.
