This light and easy lunch meal prep incorporates fresh fall tastes like sweet & juicy apples, creamy brie cheese, tangy cranberries and crunchy pecans.
Fall is upon us! You know what that means, right?
It means that we are officially in the season of tasty treats and delicious dishes. Halloween is just around the corner…then there’s Thanksgiving…and the Christmas parties and foods just never seem to end!
I am excited for all of those things, but that means I want to make sure I’m extra vigilant about my meal prep. That way I don’t have to feel guilty while I’m indulging later!
The good news is that there are plenty of fresh & healthy fall flavors. This salad includes a few of my favorites: Honeycrisp apples, brie cheese, cranberries, and pecans.
I like to season my chicken with a mixture of thyme, rosemary, and basil. You can easily substitute the seasonings of your choice, or just stick with salt & pepper if you are more of a plain Jane.
I usually pack a side of cranberry or raspberry vinaigrette to serve with this Fall salad. It is also good with a little champagne vinegar and oil.

Fall Chicken Apple Brie Salad Recipe

Ingredients
4 Chicken Breasts
2.5 Tablespoons Olive Oil
3 Teaspoons Dried Herbs (like basil, thyme, and rosemary)
8 – 10 oz Spring Mix, washed
6 oz Brie Cheese, cut into 1″ cubes
1 Large Apple, cut into 1″ cubes
1/2 Cup Pecans
1/2 Cup Dried Cranberries
5 green onions, chopped
Instructions
Preheat your oven to 375 degrees F.
Trim any excess fat off your chicken breasts.
Mix the olive oil, herbs, salt, and pepper together in a small bowl. Pour or brush evenly over the four chicken breasts.
Place in the oven and cook for 20-30 minutes, until the internal temperature is 165 degrees F. Set aside and allow to rest.
Add spring mix to a large salad bowl. Place the rest of the ingredients on top. Gently toss together until salad is mixed. Divide evenly among your meal prep containers.
Once cooled, place one chicken breast on top of each salad. Seal with lid and store in the refrigerator until ready to eat.
